• 1 tbsp olive oil
• 3 tbsp PURITI Manuka Honey
• 2 garlic cloves, crushed
• 1 tbsp tamari or soy sauce
• 1/8 tsp white pepper
• Optional: chilli flakes
• 4 fillets of salmon
• 1-2 lemons, sliced in to circles
Preheat oven to 200 deg.
In a small bowl mix together oil, honey, crushed garlic, tamari, white pepper, chilli flakes (if using).
In an oven proof dish, place lemon slices and then the salmon fillets on top. Season with salt and pepper. Pour glaze mixture over the salmon and allow to marinate for 15 mins. After 15 mins, use a spoon to coat the salmon with the glaze sitting in the base of the dish.
Turn the oven to grill and place salmon under the grill for 10 mins. Take out of the oven and baste salmon with the glaze in the bottom of the dish. Bake for another 5mins until golden and caramelised.
Serve with steamed or roast broccolini and coconut wild rice.
