    Firstly, it is liquid. When you are substituting refined sugar with Manuka honey, it is important to reduce the amount of liquid in other ingredients. A good rule of thumb is to reduce liquids by ¼ cup to every cup of honey. 

    It is also not recommended to entirely replace the sugar. This will completely change the composition of the cake or cupcake and can create a dense, sticky batter that struggles to rise. 

    This brings me to my next point. Because of the beloved consistency of Manuka honey in New Zealand, it may alter the rising capabilities of the recipe. Try adding a ¼ of a teaspoon of baking powder to every cup of Manuka honey to give your baking that extra lift.  

    The final big tip for baking with Manuka honey is to drop the temperature. Honey is more likely to caramelise or burn. Reduce the temperature down in order to prevent this.
